Singleton Whisky and dessert pairing

A whisky cocktail and dessert pairing like no other

Until the 12th of December, the restaurant has an exclusive Singleton 12 year old whisky cocktail and dessert pairing, it is really rather special if we do say so ourselves!

Our talented bar team have come up with delicious twist on a Manhattan cocktail to accompany this exclusive dessert; caramelised apple and hazelnut stack, hogweed cream, elderberry jelly.

This dessert is entirely vegan and beautifully compliments the complex flavours in the accompanying cocktail. The bottom layer of the stack is a soft hazelnut cake, layered with caramelised apple and topped with a hogweed cream. Hogweed seeds have an orange-cardamom flavour which ties in with the sweetness of the caramelised apple. And finally garnished with an apple skin tuile, hazelnuts and apple and elderberry jellies.

The Singleton Manhattan

  • 35ml Singleton 12yr Whisky
  • 12.5 Italicus Rosolio di Bergamotto
  • 25ml Sweet Vermouth
  • Cocchi Americano
  • 10ml Dom Benedictine


The Singleton Whisky dessert pairing is available in the OXO Tower Restaurant until the 12th of December.
