Food wastage in the hospitality industry accounts for 12% of total food waste in the UK, approximately 1 in every 8 meals. We care about where our produce comes from, taking an interest into the farming techniques, so we know we source the best ingredients. Through this passion comes the desire to celebrate as much of each ingredient and throw away as little as possible.
As proud partners of the SRA (sustainable restaurants association) We continue to make sure that food waste is taken seriously in all that we do at OXO.
This years theme is WIN, DON’T BIN.
Our head of pastry has come up with a new dessert in the brasserie that focus on the importance of using all elements of the ingredients when possible. New to the brasserie all day dining menu, Treacle tart with rhubarb, and vanilla ice cream. This dish not only features elements such a breadcrumbs that have been cleverly brought forward from other dishes, but also features rhubarb which is deliciously seasonal and used throughout other dishes in both the restaurant and brasserie.
